        I HAVE read this book and I HAVE used many of the recipes so I AM qualified and ready to review this book. It does not deserve anything less than five stars and it is worth the purchase for the chapter on French bread, alone. At first glance, one might say it is intimidating due to its length, however, it is due to its length that it is so easy to understand. Julia pain-stakingly breaks everything down to make her recipes very simple for even the most uneducated. One bit of advise, however, that Julia is not alive to give. With all her recipes, I would be inclined to choose and buy organic ingredients as something as simple as flour is not what it was sixty years ago thanks to the likes of the Monsanto corporation. You need to educate yourself where Julia is no longer able. Remember, in Julia's day, there was no genetic modification of our crops (which, for example, produces wheat MUCH higher in gluten), animals were not pumped full of hormones and antibiotics and they ate what evolution had intended them to eat. SO ... when using these recipes, it is my personal opinion and advise to GO ORGANIC for accuracy.

              It is impossible to give a proper review since I received this book only 1 week ago. However, I have reviewed a number of the recipes and I am looking forward to testing them. My one vice is food and French cooking is wonderful. If this book is as good as Volume 1, then it may get 5 stars later.
